Lots of 73 shows have those open, jazzy jams -- some of my favorites are 2/17 Chicago (just the jam, but a total monster), 3/24 Philly, 6/22 Vancouver, 10/29 St. Louis all have some long, extended unique jams that are pretty jazzy and heavy. 11/14, 11/17, and 11/21 have some very long, creative jam segments incorporating a bunch of song sequences that are pretty unique. 7/27 Watkins Glen has probably the longest standalone "jam" they ever did (almost 30 min, starting from a dead silence), and about as jazzy as it gets. But really any show with an Other One or a Dark Star probably has some of what you're looking for.
As for 75, all those shows are great, imho. There's only four, so get 'em all! 3/23 is probably as intense as they got in that "jazz fusion" vein, and check out the 6/17 Help>Slip for some super jazzy jamming -- the other two 75 shows are incredible, but less "jazzy" than I think you're talking about...
is a good resource if you haven't seen it -- it has a bunch of in-depth show reviews that may point you to some gems from eras that you're not familiar with.
